BARATTI & MILANO chooses SACMI Packaging & Chocolate

The Baratti & Milano tradition looks towards the future with SACMI Packaging & Chocolate.
After years of fruitful collaboration, the first “hybrid” in the sector - the new HY7 - goes into production.

This case history reports an encounter between Baratti & Milano, custodians of the Turin confectionary tradition and Carle & Montanari of SACMI Packaging & Chocolate.
This led to a completely new way of interpreting production and consumption, where the quality and unique nature of the product is complemented by the elegance and quality of its wrapping, along with efficiency, versatility and a focus on sustainability.

Baratti & Milano, “Dispensing delights” since 1858

Established as a small artisanal shop by Ferdinando Baratti and Edoardo Milano, two confectioners from Piedmont, the company was already renowned in the 1870s when Turin, capital of Italy, was undergoing a significant social, urban and cultural transformation.
This is an Italian industrial story where tradition persists with tenacity and far-sightedness, where the historic “Caffè”, a meeting place for artists, poets and aristocrats could complement a progressive production and trading facility.
Baratti & Milano, custodians of the “traditional Turin-based confectionary knowledge” whose roots lie so deep that it can look forward to the future.

From raw materials to packaging: excellence and precision

Confectionary, chocolate. All part of a careful selection of raw materials and the ability to directly follow all processing stages. Mainly cocoa, but also other ingredients like milk that go to make up an exclusive, high-quality product.
The quality of the wrapping adds further value and can be used as a seal of warranty of the product in addition to being a tool to facilitate the development of new collections.
This is why Baratti & Milano chose Carle & Montanari, a leading Italian manufacturer of machines for chocolate and confectionary, established in 1907 and now one of the key brands of SACMI Packaging & Chocolate.

HY7, the 1st “hybrid” wrapping system

Baratti & Milano and Carle & Montanari have a long-standing collaboration and this was behind the most recent choice of investment.
What are the objectives? To increase productivity, improve the quality of the wrapping and facilitate the development of new products.
HY7 plays the leading role, a new multi-style flat-base praline wrapping system by Carle & Montanari: there is a new concept behind the machine, which is the first on the market to use “hybrid” technology.
Its design and operation are not just based on traditional mechanical transmission but also on high-performance, energy-efficient servo drives.
This results in maximum performance repeatability and stable quality over time since each movement can be adjusted as required.

NEW WRAPPING STYLE

Market demands for new wrapping styles will increasingly go hand in hand with the need to maintain maximum efficiency and reduce costs: HY7 is the ideal solution to cope with this type of future.
The machine is designed to manage multiple wrapping style - Side & Double Twist, but also Bunch, Envelope and Wallet – and can cope with immediate style changes thanks to built-in modules that allow the changeover to be made through a panel-based formula and rapid replacement of few components.
With HY7, the customer can also add new modules over time, adopting new styles without having to replace the machine.

«Above all, with HY7, the quality of the output wrapping product
is really consistent without the need for any corrections or additional cleaning».
 Enrico Bedino, Maintenance Manager

Authentic modularity

HY7 it is designed around the concept of modularity.
The machine comprises a standard base on which an aluminium plate is mounted, perforated as required, where the interchangeable cantilever units are placed (the modules).
The result is a perfectly tailor made configuration that can meet the requirements of each and every customer and project.
This is exactly what Baratti & Milano was looking for and it is very happy with the performance one year after the testing and fine-tuning, with an eye already to the future.

Authentic modularity

“Smart Infeed” system

Among the many, innovative features of the HY7, the customer was especially struck by the smart infeed system.
This feeds the product - in this case, a multi-layered chocolate product “cremino”, which is extremely soft and delicate - without damaging it; secondly, the entire supply area of the machine is cleaner, thus limiting downtime and maintenance requirements.
In addition to the Smart Infeed system, random product outfeed can be changed to on-conveyor orientation with the HY7. Basically, management of the input and output can be completely automated according to the requirements of the plant.

Low maintenance, reduced footprint

The modularity and automation features are not the only good things about HY7, it is also extremely compact.
Its electrical panel can be on-board and the entire wrapping cycle is oil-free, thereby reducing any risks of product contamination to zero.
The machine also has tilted surfaces to avoid any build-up of contaminants, thereby further reducing cleaning times.

Biomaterials

HY7 is a Carle & Montanari machine that guarantees maximum quality at high-speed with delicate products (in this case, a chocolate cremino with a “double wrapping”, aluminium coupled with a banderole and sealed with a glue spot).
It will be very easy to add the “Double Twist” style, already being considered by Baratti & Milano for the near future.
Honouring tradition, the territory and quality also means respecting the environment. This is why Baratti & Milano and Carle & Montanari are taking the lead on testing the new eco-friendly wrapping biopolymers on the HY7.
